A part of me thinks that since they got so many "a-list" voice actors...they have a hard time reconciling their schedules, and getting the lines done in a timely fashion.

Wouldn't be the first this celebrity voice actors had such side effects on Telltale, as I recall Gavin Hammon guessing that having Michael Madsen as Carver's voice actor was part of the reason for his short-lived appearance in Walking Dead Season 2's overall plot. As a matter of fact, I even recall Scooter's voice actor being implied to have been behind part of the late Borderlands Episode 2 release.

If that's the case, then well that sucks, because I still say they killed him far to early. Well, then I can at least say it was not the developers fault.

Also like we said before, GoT's probably done some of the logistical stuff in advance, helped by the resources and strong canonical storyline they have. I think some of their recording is right in England, a considerably smaller country than the US. Meanwhile, TFTBL is still gathering voices like Ashley Johnson's, because they're basically creating that plot from scratch.

GoT has been picking up voice actors as well (Sylvi, etc.), but they've got the bedrock, for lack of a better word, in place. Did they just pick her up? Or just tell the world that they are using said voice actress? Hard to say.
