I remember there was a show called The Killing. It was on some network or another, but got cancelled. however, the story wasn't over, and it just ended on a cliff-hanger. amc picked it up, but it did very poorly, so it was once again cancelled after one season. Netflix picked it up after amc, and the writers simply decided to make that the last season so that the fans could have ending to the series without anymore bullshit and cancellations.
So... it's definitely possible that Netflix or another network(amc?) could pick up the show.
Also worth pointing out, that amc kept a show on after the writers stopped working on it without giving it a proper ending; Hell on Wheels. The writers actually quit the project after Season Two. and for anyone who watches the show, you know what a big fuck you that would have been for everyone.
So, amc kind of has a history of trying to pick up or keep popular shows after they get cancelled by their network or even if the writers quit. More than possible that they could pick up Hannibal.

While the information does feel out of sudden, I'm not that surprised. The ratings were awful this season - but that's kind of understandable. The show is still fantastic, but the initial three episodes of S3 are so slow paced that it could alienate potential viewers.
Hannibal is an international coproduction, though, so I'm sure that even if any US cable network/Netflix/Amazon won't pick it up, it will be produced anyway by some other network outside the States. I've heard that it's making a ton of money for Gaumont and AXN, so I guess that the show will live. Fuller said that he has plans for six seasons to tell the complete story, so I hope those three remaining seasons will be created.
Oh, and fuck you, NBC.

I honestly think the second season kinda sucked. Hannibal was too all-knowing and powerful, the final episode with Hannibal vs 3 or 4 people is ridiculous. The first season was great, the second sucked IMO.

The first season was great, the second sucked IMO. The quality was somewhat off during the final episodes in S2, tbh. Also: Red Dragon storyline begins in 3x08, with Dolarhyde being played by none other than Richard Armitage a.k.a. Thorin
