Hellsing is probably one of my favorite anime of all time, both the original 2003 series, and the recently finished, "Hellsing Ultimate".
Basic Concept: The Hellsing Organization is a group dedicated to protecting England from various supernatural threats, run by the Helsing family since Abraham Van Helsing founded the organization. It's current leader, Integra Fairbrooks Wingates Helsing, has released one of the organizations secret weapons, the vampire Alucard. Alucard is bound to serve the Helsing Family, with his power severely restricted by several seals. He works for the organization to hunt down and kill these supernatural threats when their highly trained human soldiers are not enough.
And... This is where differences arise.
In both, the town of Chedar is attacked by a vampire, who creates an army of ghouls(basically zombies controlled by the vampire), Alucard goes in and kills him and his army, but fatally wounds a police officer, Seras Victoria. To save her, Alucard turns her into a vampire.
Past this point, the series split, and are totally different.
Both are good, and both have problems, at the end of the day, Ultimate is more enjoyable to watch, but I'd say that the original is better.... slightly. The comic(yes, comic, not manga. Not sure why, but they don't call it a manga) series is clearly the worst, and Ultimate follows it closely, while the original was vastly different.
Really, it's best to watch both series, then you can enjoy both of them, and imagine the phenomenal, fantastic thing that could have been(wishful thinking: could still be?) if elements were taken from both.
To break it down:
The original:
-Absolutely phenomenal music
-Awesome plot/story
-Develops it's characters better then Ultimate
-Equally good voice acting(English version)
-lackluster-to-bad animation/art
-Odd character design(not bad, just... odd)
-disappointing ending
-excludes some of the best characters from the comic series(Pip Bernadotte and the Wild Geese, etc.)
-introduces some new, interesting characters
-weak main villain
One last thing about the original that I find very hard to describe... It feels cooler. Just, the atmosphere, the general feel of the show is really awesome.
Ultimate:
-Absolutely PHENOMENAL Animation/art
-good music, but doesn't fit the show
-rushes through many plot points
-characters are not developed as well
-much stronger villains
-absolutely ridiculous plot(not in the good way)
-epic, spectacular feel to some scenes(I prefer the original's "feel", but that's just me)
-draws out the final battle for six fucking episodes(6 of 10)
-Some pretty strong characters, key work: some
-Horrible ending, seriously, if you watch it, stop watching maybe ten minutes before the end, you're left with a cliffhanger, but... God, that ending...
-Very forced, horribly animated, incredibly out of place "comedic" moments(You'll know them)
-references to "Hellsing: The Dawn", a series which has three, 5 minute clips, and only 6 issues. So you'll never understand the references
-near the end, very important plot details tied to Hellsing: The Dawn, which, again, is still unfinished
